So for episode 3 of my rice diaries, a series from finding interesting ways of cooking rice, while making Theozzy's village palm oil rice, it is easy, tasty, very delicious and as usual, these are simple ingredients. Smoked mackerel, onion, pepper, which we have red bell pepper, scotch bonnet pepper, long sweet pepper, and obviously, cooked rice. Yeah. In a portable and efficient Buchymix food processor, we put the pepper in, onion in, and obviously cooked rice. Yeah. In a hot pan, pour palm oil in, smoked mackerel in. Allow to fry for about 3 to 5 minutes like this. Then chopped pepper mix in. Test and allow to cook for about 10 minutes. Then mix, stir and allow to cook for an additional 2 minutes on very low heat. Then fried mackerel in. We do what? Stir, stir and boiled eggs in, then we stir, stir. Taste and adjust salt level. Then cooked rice in. Stir to combine rice and stew. Stir and allow to cook for two more minutes on very low heat. And there you have it. Simple, delicious, Tuzzy's village palm oil rice. Ready. Add fried plantain, of course, why not? And as usual, may your rice always slap and may your internet never buffer. The next.
