The Vanilla Cake Base for My Berry Chantilly Cake Yield: 3 × 8-inch round cake layers I already have my go-to vanilla cake recipe, but for my Berry Chantilly I wanted something a little lighter and more delicate. This version uses 5 whole eggs plus 150g of egg whites (about ½ cup + 2 tsp). The extra egg whites help give this cake a soft, airy, delicate crumb, while the butter, oil, sour cream, and a little instant vanilla pudding keep it moist and flavorful. It’s light enough to pair beautifully with the Chantilly cream and berries, but sturdy enough to hold up to the berry soak and all those layers. Ingredients Dry • 4 cups (452g) cake flour • 1.34 oz (38g) instant vanilla pudding mix • 2 1/2 cups (500g) granulated sugar • 1 tbsp + 2 tsp (20g) baking powder • 1¼ tsp fine salt Butter & Oil • 1 cup (226g) unsalted butter, softened • ¾ cup (165g) neutral oil Wet • 5 large eggs, room temperature • 150g carton egg whites (about ½ cup + 2 tsp), room temperature • 1½ cups (360g) whole milk, room temperature • 1 cup (240g) full-fat sour cream, room temperature • 1 tbsp vanilla bean paste • ½ tsp almond extract Directions 1. Preheat oven to 325°F (163°C). Grease and line three 8-inch round cake pans with parchment. 2. Whisk together the cake flour, pudding mix, sugar, baking powder, and salt. 3. Add the softened butter and oil. Mix on low until the mixture resembles damp sand. 4. In a separate bowl, whisk together the eggs, egg whites, milk, sour cream, vanilla bean paste, and almond extract. 5. Add the wet ingredients to the dry ingredients in 3 additions, mixing on low just until combined. Scrape the bowl between additions and avoid overmixing. 6. Divide the batter evenly between the three pans. 7. Bake at 325°F for 40–50 minutes, or until the tops spring back lightly and a toothpick comes out clean or with a few moist crumbs. 8. Cool in the pans for 15 minutes, then transfer to a wire rack to cool completely.
