how I make healthier rice as someone with insulin resistance. As a Filipina, rice is going to always be a part of my diet. I would mix white rice, some brown rice, and I'm going to add more fiber. I add in the super grains. I also add in purple rice. This is my version of healthy rice. It includes white rice, brown rice, black rice, red quinoa, millet and buckwheat. By doing this, I don't have to stop eating rice just because I have insulin resistance. I will cook about two cups of rice in my rice cooker and then before I consume it, I actually freeze it first. That way it changes the starch structure to make it more of a resistant starch. So it doesn't spike up my blood sugar too much when I consume it. This is what it looks like. This is what I do is I put my rice in these super cubes because they're perfect portion per person. Usually eat one cup of cooked rice for lunch or dinner. So the two cups of uncooked rice that I made made four cups of cooked rice. I put in the freezer. This is what it looks like frozen. I put it in a glass container. I put a damp paper towel on top. And then I microwave it for 1 minute and 29 seconds. And this is what our rice looks like. It's fluffy. It's soft. Look at that. I love it.
