POV: lunch got easier when my 7 dinner meal plan pulled double duty 👀 I used one rotisserie chicken to make 5 work lunches for the week: chicken fajita rice bowl, lemon herb chicken couscous, BBQ chicken quesadilla pack, chicken Caesar pasta salad, and a hot honey chicken ranch wrap. This is the kind of dinner meal plan / dinner ideas meal prep combo that saves me from the daily “what am I eating” spiral. Basically a 7 day meal plan meets budget grocery meal plan, but make it actually realistic for a desk week.
