EASY MEALS FOR 2, EP. 4 BUTTER CHICKEN AND RICE Ingredients: Chicken Marinade * ½ cup (120g) full-fat yogurt * 1 tsp garam masala * 1 tsp kosher salt * 1 tsp pepper * 1 lb (450g) boneless, skinless chicken thighs Butter Chicken Curry * 2 Tbsp (30g) olive oil * ½ onion, diced * 1 tsp minced ginger * 3 cloves garlic (10g) minced * Kosher salt and freshly ground black pepper, to taste * 1 tsp smoked paprika * 1 tsp ground cumin * 1 tsp garam masala * (120g) crushed tomatoes * 1 tbsp tomato paste * 1/2 cup water * 1/2 cup heavy cream Instructions: 1. Season the Chicken * In a bowl mix together your chicken, greek yoghurt, garam masala salt and pepper. * you can marinate the chicken for 30 minutes for maximum flavour but honestly I just skipped that because I was hungry. 2. Sear the Chicken * turn your stove to medium high, add oil to coat the bottom of the pan, once you see a bit of smoke coming from the pan, add in your chicken * do not overcrowd the pan ( this will give you watery chicken ) you don't want that, we're searing the chicken not steaming it. * cook until it is brown, then flip, should cooked for a total of 6-8 minutes ( if you're worried about the chicken being raw, we'll cook it later in the curry sauce ) 3. Make the Curry Sauce * deglaze the pan with some 1-2 tbsp water, then add onion, garlic and ginger, cook for 1-2 minutes * add tomato paste and sauté that for another 1-2 minutes before pouring in your crushed tomatoes and more water. * add heavy cream and remaining spices, let that simmer for a few minutes before adding in your chicken. * let that all cook for about 10 minutes. 4.
