I learned this and now you can make it too. Let's make a beurre blanc. It's a silky, buttery sauce that's surprisingly easy to make but can elevate so many dishes at home. Start by adding a little oil to a pan. Then add your shallots to the pan with a pinch of salt and black pepper. Cook them down a bit. Then add a squeeze of lemon juice, which adds a nice brightness and acidity to the sauce. Continue to sweat the shallots until softened. Pour in your white wine, then let it simmer until it reduces by about half. Grab your strainer and then strain out the shallots and return the liquid to the pan. Turn the heat to low and then add a tablespoon of heavy cream. This helps stabilize the sauce and makes it less likely to break. Then start with very cold cubes of butter, the sauce is silky and emulsified. Take the pan off the heat occasionally. Make sure it doesn't get too hot. We served this over a John Dory fillet for our final school. It's also incredible with scallops, shrimp, or other vegetables. Save this recipe down and add this to your dinner rotation.
