SpaghettiOs w/Mini Meatballs IB: @madebymaddyr Meatball Ingredients * 2 pounds ground beef * 2 large eggs * ½ cup plain breadcrumbs * 1 small onion, finely minced * 1 teaspoon garlic powder * 1 teaspoon dried oregano * 1 teaspoon freshly ground black pepper * 2 teaspoons kosher salt * ¼ cup fresh parsley, finely minced Sauce & Pasta Ingredients * 3 tablespoons olive oil * 1 (1-pound) box La Molisana Anellini Siciliani No. 60 pasta * 4 cups chicken broth @Better Than Bouillon * 4 cups marinara sauce **** * 2 cups heavy cream * 1 cup freshly grated Parmesan cheese * 1 cup finely grated Parmesan cheese, plus more for serving * Salt and freshly ground black pepper, to taste * Chopped fresh parsley, for garnish Instructions 1. In a large bowl, combine the ground beef, eggs, breadcrumbs, minced onion, garlic powder, oregano, black pepper, kosher salt, and parsley. Mix just until combined—don’t overwork the meat. 2. Roll the mixture into mini meatballs, about the size of a rounded teaspoon. 3. Heat the olive oil in a large Dutch oven or deep skillet over medium-high heat. Add the meatballs and cook until browned on all sides. They do not need to be fully cooked through at this stage. 4. Add the uncooked anellini pasta and chicken broth. Stir well, bring to a simmer, then cover and cook over low heat until the pasta is just al dente, stirring occasionally to prevent sticking. 5. Stir in the marinara sauce, heavy cream, and 1 cup of the grated Parmesan. Simmer uncovered for 5–10 minutes, or until the sauce is creamy and slightly thickened and the meatballs are cooked through. 6. Stir in the remaining Parmesan, then season with salt and pepper to taste. 7. Garnish with fresh parsley and extra Parmesan, then serve hot. *** Marinara Sauce (store bought is great or homemade) INGREDIENTS 28-ounce can of San Marzano whole peeled tomatoes 5 tablespoons butter 1 onion, peeled and cut in half 4 cloves minced garlic Salt In a saucepan, combine the tomatoes w/their juices, the butter, the onion halves, garlic and 1-2 tspn of salt. Over medium heat, bring to a simmer. Cook, uncovered, for about 45 minutes. Stirring and mashing up any pieces of tomato with a spoon. Discard the onion before using/storing.
