I don’t think I’ll ever make corn any other way after this 😋 Full recipe below. 🌽 Garlic Butter Old Bay Corn Rounds Ingredients • 3 ears fresh corn, husked • 2 tbsp melted butter • 1 tsp olive oil • Garlic powder, to taste • Onion powder, to taste • Smoked paprika, to taste • Old Bay seasoning, to taste • Pinch of cayenne pepper (optional) • Salt, to taste • Freshly cracked black pepper, to taste • Zest of 1 lemon • Fresh parsley, finely chopped • Freshly grated Parmesan cheese • Lemon wedges, for serving Directions 1. Preheat your oven to 425°F (220°C). 2. Cut each ear of corn into 1½-inch rounds. If needed, boil the whole ears for 3–4 minutes first to make slicing easier, then let them cool slightly before cutting. 3. In a large bowl, combine the melted butter, olive oil, garlic powder, onion powder, smoked paprika, Old Bay, cayenne pepper, salt, black pepper, and lemon zest. 4. Add the corn rounds and toss until every piece is evenly coated with the seasoned butter. 5. Arrange the corn in a single layer on a baking sheet. 6. Roast for 20-40 minutes, flipping halfway through, until the corn is tender and lightly caramelized. 7. Broil for the last 2–3 minutes, watching carefully, until the edges are beautifully charred. 8. Remove from the oven and immediately brush with a little more melted garlic butter. 9. Finish with freshly grated Parmesan cheese, a little more fresh lemon zest, and chopped fresh parsley.
