Cajun Meatball & Potato Stew For the Meatballs * 1 lb. ground sirloin * 2–3 cloves garlic, minced * 1/4 of a onion, finely minced * 1/4 of a bell pepper, finely minced * A teaspoon of each of the following spices * Salt,Black pepper, Cajun seasoning,Garlic, Onion seasoning and Italian herbs * 1 tablespoon mustard * 1 tablespoon Worcestershire sauce For the Stew * Olive oil, for browning * 1 onion, chopped * 1 bell pepper, chopped * 5–6 potatoes, peeled, rinsed, and cubed * 4–5 cloves garlic, minced * 1 heaping tablespoon roux * 1-32 oz container chicken broth * 2 cups water * 1 teaspoon each of the same seasonings used in the meatballs Instructions In a large bowl, combine the ground sirloin, minced garlic, onion, bell pepper, seasonings, mustard, and Worcestershire sauce. Mix well, then form the mixture into meatballs. Add a drizzle of olive oil to the bottom of a large pot and brown the meatballs on all sides. Remove the meatballs from the pot and set aside. Add the chopped onion and bell pepper to the same pot and sauté for 6–8 minutes. Add the cubed potatoes and cook for a few more minutes, then stir in the minced garlic and cook until fragrant. Add the roux, chicken broth, water, and seasonings. Stir well, bring everything to a boil, then reduce the heat to medium. Cover and cook for 15 minutes. Uncover and add the meatballs back into the pot. Reduce the heat to low, cover, and let the stew simmer for another 20 minutes, or until the potatoes are tender and the meatballs are cooked through.
