TIP: To help prevent craters when flood a second layer of icing, you can do one of the following: 1. Poke holes in the surface of the icing (like I'm doing here and my favorite technique) 2. Flood the second layer about 30 minutes after you flood the first layer 3. Pipe a generous squiggle of icing (with a piping consistency) before flooding on top
