Didn’t get a chance to post on Friday, but lunch was rack of lamb with loaded baked potatoes, sautéed garlicky green beans, fresh figs and a chocolate butter cup for dessert. The Best Garlicky Green Beans I like to use French green beans for this recipe, but regular green beans work just as well. Ingredients * French green beans * 2 tablespoons olive oil * Garlic cloves, thinly sliced * Salt, to taste * Black pepper, to taste * Onion powder, to taste Instructions 1. Cook the green beans: Add the green beans to a pot and cover them with water. Bring the water to a boil and cook for 5 minutes. 2. Cool the beans: Drain the green beans and immediately run them under cool water. Set aside. 3. Sauté the garlic: Thinly slice the garlic cloves. Add about 2 tablespoons of olive oil to a pan over medium heat. Once the oil is slightly heated, add the garlic and cook until fragrant, being careful not to let it burn. 4. Sauté the green beans: Add the green beans to the pan. Season with salt, pepper, and onion powder to taste. Sauté for 3–5 minutes over medium heat, or until the green beans reach your desired texture. 5. Keep them moving: Stir or toss the green beans frequently while cooking so the garlic and beans don’t burn.
