For some reason I've been craving pickled mango which is honestly kind of an odd thing to crave considering I've probably only had it three or four times in my life and I haven't had it in 10 years or so. But I do remember really enjoying it and I was kind of picky when I was younger. It just tastes so good. It's like crunchy, it's spicy, sweet, sour. And for some reason I just really want it. So we're gonna make some. And I hate to say it, but we're gonna be winging this, so there's a good chance this might not turn out. So I went to the store and I picked up two green mangoes. You need green mangoes because they're like more firm. You cannot use soft mangoes. When I was younger, I think we got pickled mango from H Mart and it comes in a bag. It doesn't sound appetizing at all, but I remember it was just so good. It's not very good for you because they put like food coloring and preservatives in it. So that's why I'm trying to make it myself. Just finished peeling both mangoes. I hit the seed. Oh, pretty good. I already taste pickled. Our green mangoes are like totally different kind of mango. You know, for this one, we're gonna use some regular distilled white vinegar instead of white wine vinegar and we're gonna see if the flavor is different. Since the mangoes are not sweet, not sweet at all, they're pretty sour. I am going to be using some sugar. One tablespoon and a half. One tablespoon and a half of sugar. And then one teaspoon of salt. So that's like a quarter teaspoon. So half a teaspoon. I'm gonna heat this on the stove until everything dissolves. I have a fear of a glass jar breaking on me by putting something hot in it. So I just ran it under hot water. Let's see. I don't think it's gonna fill it all the way. We're gonna do a little bit more vinegar. A little bit under a quarter cup. And then a quarter cup of water. And then a quarter cup of water. And then half a teaspoon of salt. And then one tablespoon of sugar. Pour that in here. Now that was satisfying because that was perfect. I put this little jar where we're gonna do just a quarter pepper. A quarter teaspoon of red pepper flakes. Okay, one jar done. You know, for this one, we're gonna use some regular distilled white vinegar instead of white wine vinegar and we're gonna see if the flavor is different. Little over a quarter cup. And then half a cup of water. Half a teaspoon of salt. And then one tablespoon of sugar. Pour that in here. Now that was satisfying because that was perfect. I put this little jar where we're gonna do just a quarter pepper. A quarter teaspoon of red pepper flakes. Okay. I'll let these cool down, put them in the fridge and then maybe we'll try them in two days. I'm assuming they'll be ready in like three days. I'll try them in two days. On Friday. I really hope this turns out. Hot.
