Carrots, chicken and rice are some of the cheapest things I buy, and somehow my kids LOVE this meal. FULL RECIPE BELOW 👉🏽 if you want delicious meals without the expensive price tag and without having to figure out what’s for dinners 👉🏽 and if you want the grocery list done for you and all you have to do is add everything to your cart with one click 👉🏽check out my meal plans LINK IN BIO INGREDIENTS: Carrots (however much your family needs) 1-2 lbs chicken (your preferred cut and however much your family needs) 1 Onion diced 3-4 Garlic cloves minced 1-2 Cups uncooked rice (plus water or broth - amount depends on how much rice. Please see my note on rice) Chicken bouillon (1 tbsp) Italian seasoning (1 tbsp) Butter (2 tbsp) Seasoning you need according to taste: Salt Black pepper Onion powder Garlic powder Trader Joe’s 21 salute (I used this for carrots but it’s not necessary, use your favorite seasoning) Instructions: Roast carrots for an hour at 325-350 flipping halfway through. Some ovens are hotter than others so you would need to figure out the sweet spot. I like roasting it low and slow. I seasoned mine with Trader Joe’s salute, salt and some oil but feel free to use your favorite seasoning. Season chicken generously with salt, pepper, onion powder and garlic powder. On medium heat, sear chicken on both sides until cooked through. Set aside. In the same pan, turn the heat on low and saute onions and garlic. Let it cook through and caramelize. Add 2 tbsp of butter and let it melt. Pour uncooked rice and toast until it smells nutty- about 3-4 mins. Add 1 tbsp of chicken bouillon and 1 tbsp of Italian seasoning. Add liquid. Please note that rice to liquid ratio is going to differ depending on what kind of rice you have. Recipe Tin Eats does an amazing job explaining how to cook rice. Stir the pan and scrape the brown bits at the bottom. Bring it to a boil and turn the heat on low immediately then put the lid on. Do not lift the lid until the rice is cooked - about 10 mins. I garnished my plate with queso fresco - which is completely unnecessary btw 😆 but I just needed something to make it look pretty and that’s what I had.
