STICKY TOFFEE PUDDING✨ I fear I’m in my cosy dessert era???🍂 & I think I’ve officially found my new favourite!! Warm sticky toffee pudding, homemade caramel and a scoop of vanilla ice cream melting over the top 🤤🙂↕️ Perfect for a cold evening, a cup of tea and your favourite comfort show in the background🔥 Ingredients: Sponge •200g dates •250ml boiling water/hot black tea •1 tsp bicarbonate of soda •90g unsalted butter •150g dark brown sugar •2 eggs •1 tsp vanilla extract •2 tbsp black treacle •175g self-raising flour •Pinch of salt Caramel (makes lots for pouring too) •85g butter •200g dark brown sugar •250ml double cream •Pinch of sea salt 👩🏼🍳 1. Preheat oven to 180°C and grease your baking dish. 2. Chop your dates (remove pips) Add the dates, boiling tea/water and bicarbonate of soda to a saucepan. Simmer for 10 minutes, until the dates are very soft. (This will froth up) Leave to cool slightly. 3. Whisk together the butter and brown sugar (I recommend an electric whisk) 3. Add the eggs one at a time & mix! Add in the vanilla and treacle, mixxx 4. Gently fold in the flour and salt 5. Blend your dates (I did smooth but you can chunky if you like) & lastly fold in your date mixture! 6. Pour into the dish and bake for 30-35 minutes or until a skewer comes out with moist crumbs but no wet batter. 7. For the caramel melt the butter and brown sugar in a medium low heat. Once melted add the cream slowly & stir. 8. Let heat until bubbling then add your sea salt. Simmer gently for 2–3 minutes, stirring. 9. Take out & leave the pudding for 2–3 minutes, then poke holes all over and pour over some of the caramel. Around 1/3 or 1/2 the caramel. 10. Leave for 5–10 minutes to soak in.
