🌽🍺 Drunken Southwest Corn Dip Creamy, cheesy, loaded with Southwest flavor, and of course we’re adding a splash of beer because why not? 😂 This is the kind of dip you put out and everybody ends up standing around the pan eating it! Ingredients * 2 (8 oz) blocks cream cheese * 1 (8 oz) block pepper jack cheese, cubed or shredded * 2 cans Southwest corn, drained * 1/4 cup sour cream * 1/4 cup mayonnaise * Cotija cheese, to taste * Taco seasoning, to taste * Tajín, to taste, plus more for serving * Fresh cilantro, chopped, to taste * Beer, as needed Directions Preheat your oven to 350°F. Add your cream cheese, pepper jack cheese, drained Southwest corn, sour cream, and mayo to a baking dish. Next, add in your Cotija cheese, taco seasoning, Tajín, and chopped cilantro. Pour in a little beer to help loosen everything up and make it nice and creamy. Bake at 350°F for 20–30 minutes, stirring about every 10 minutes so all that cheese melts together. If you want it a little creamier, add another splash of beer as you stir. Once everything is melted, hot, and creamy, pull it out of the oven and give it one final stir. Scoop it into your serving dish, sprinkle a little extra Tajín over the top, and serve it hot with tortilla chips.
