Taco Enchilada Pockets Ingredients: 3 large flour tortillas 1 lb ground beef 1 packet taco seasoning 2 cups red enchilada sauce, divided 2 cups shredded Mexican cheese, divided Optional toppings: Sour cream Guacamole Fresh cilantro Hot sauce Diced tomatoes Green onions Preheat oven to 375°F. Brown the ground beef in a skillet, breaking it apart as it cooks. Drain any excess grease, then add the taco seasoning and prepare according to the packet directions. In a large bowl, mix the taco meat with 1 cup enchilada sauce and 1 cup shredded cheese. Cut each tortilla in half to make 6 halves. Divide the filling between the tortillas, placing it near the center. Fold each tortilla around the filling to create a triangle-shaped pocket. Spread 1/2 cup enchilada sauce across the bottom of a baking dish or oven-safe skillet. Place the pockets seam-side down over the sauce. Spoon the remaining 1/2 cup enchilada sauce over the top and sprinkle with the remaining 1 cup cheese. Bake for 20-25 minutes, until the cheese is melted and bubbly and the tortilla edges are lightly golden.
