Matnakash👌🏻😋 Here is what you’ll need: +700 ml lukewarm water +22 gr yeast +22 gr honey +800 gr all purpose flour +22 gr salt +22 gr olive oil (more for greasing your hands) I start with blooming my yeast, then add flour, salt and olive oil to bring everything together. I let the dough rest for 30 min, then give it stretch and folds every 20 min, about 3-4 times. (Tip: dip clean hands in filtered water between each fold to make sure nothing sticks to finger.) These folds help develop fermentation, which creates those delicious air pockets we all love so much. After all the folds, I turn it onto a well-oiled surface, divid in half, and place each section onto a greased baking sheet (add parchment paper if you like.) I then shape the dough to an oval shape, gently pressing to make those signature Matnakash lines across the top. Then it goes into the oven at 475F for 20(ish) minutes, until it’s golden on the outside. There’s something so special about making bread from scratch.
