ENCHILADAS SUIZAS, but make them macro-friendly 🇲🇽💚 As a Latina who has lost 145 LBS, one thing I will NEVER do is give up my Mexican food! It’s all about moderation, portions, and learning to make little adjustments without sacrificing FLAVOR! 🤌🏼 🌶️ INGREDIENTS For the chicken: * Chicken * Onion, tomato & 1 large garlic clove * Chicken bouillon For the salsa: * Tomatillos * 2 jalapeños & 3 serranos * 4 poblano peppers * Chicken bone broth (extra protein!) * Reduced-fat cream cheese * Cacique Mexican crema * Cilantro For the enchiladas: * Corn tortillas * Shredded chicken * Low-fat mozzarella cheese 👩🏻🍳 LET’S COOK! 1. Cook your chicken: Add chicken, onion, tomato, garlic, bouillon, and water to your pressure cooker. I cooked mine for 1 hour and 20 minutes until tender, then shredded it. Cooking time depends on your pressure cooker. 2. Soften your veggies: Add tomatillos, jalapeños, and serranos to the HOT leftover chicken broth. Cover and let them soften on warm without boiling until they burst. This helps avoid an overly sour salsa! 3. Roast your poblanos: Air-fry until blistered, steam in a bag, then peel. 4. Blend your salsa: Blend the softened veggies, cooked onion, tomato, garlic, poblanos, cilantro, bone broth, cream cheese, and Mexican crema until smooth. For thicker salsa, use less broth! 5. Heat your salsa: Pour into a cool pan, turn on low heat, and bring to a gentle simmer so the creamy salsa doesn’t separate. 6. Assemble: Instead of frying my tortillas, I microwaved them until soft! Fill with shredded chicken, roll them up, and place in a baking dish. Cover with salsa and shredded low-fat mozzarella. 7. Bake: Bake for 25–30 minutes until hot and bubbly, then broil for about 5 minutes until golden. Keep an eye on that cheese! 8. ENJOY! I served mine with asparagus instead of rice this time. Not because carbs are bad, but because it’s what I wanted for my meal prep! 145 LBS DOWN and still enjoying the food I grew up eating! 💚 Losing weight never meant eating boring food. I simply learned how to make my favorite meals work with my goals while focusing on protein, muscle growth, and balance!
