Creamy peanut noodles with sticky tofu and baked broccoli 🫰🏼 Makes 2 large/3 small serves Ingredients: Peanut noodles: 1/3 cup smooth peanut butter 1/8 cup soy sauce 1/2 tbsp rice wine vinegar 1/2 tbsp sesame oil Juice of 1 lime 1/4 cup water + more if needed 400g hokkien, singapore or udon noodles Sticky tofu: 375 firm tofu 2 tbsp corn flour 1 tbsp olive oil 1/8 cup soy sauce 2 tbsp rice wine vinegar 2 tbsp maple syrup 1 tbsp sesame oil The rest: 1 head broccoli 1 tbsp olive oil Large pinch of salt 1 spring onion, finely sliced 1 tbsp sesame seeds Method: Preheat the oven to 180 degrees celsius, fan-forced and line a baking tray with baking paper. Cut the tofu into cubes, add them to a bowl with the corn flour and toss to coat well. Set to the side. Add the 1/8 cup soy sauce, 2 tbsp rice wine vinegar, maple syrup and 1 tbsp sesame oil to a bowl. Gently stir together and set to the side. Add the smooth peanut butter, 1/8 cup soy sauce, 1/2 tbsp rice wine vinegar, 1/2 tbsp sesame oil, lime juice and water to a large bowl. Whisk together until smooth, adding more water if needed. The sauce should be pourable, and not too thick. Cut the broccoli into florets and place onto the baking tray. Drizzle with 1 tbsp olive oil and a large pinch of salt. Place into the oven to bake for 10-12 minutes. Place a large frying pan over medium-high heat on the stove and drizzle with 1 tbsp olive oil. Once hot, add the tofu cubes and fry for 2-3 minutes on each side, until golden. Ensure you keep an eye on them and turn them to avoid sticking. Once golden, reduce the heat to low-medium and add the prepared sticky soy sauce. Toss occasionally, coating the tofu in the sauce and frying for a further 5 minutes. Place a small saucepan of water on the stove and bring to the boil. Once boiling, remove the lid and add the noodles. Cook as per packet instructions. Drain the noodles and add them to the bowl with the peanut sauce. Toss to coat in the sauce well, then transfer to a bowl or meal prep container. Top with the broccoli and sticky tofu. If desired, top with the sliced spring onions and sesame seeds. Enjoy! #plantbased #vegan #veganrecipe #mealprep
