Last day of high school & finals!! It’s officially summer!! We celebrated with what our kids said was one of the best sandwiches they have ever had!! Fried Chicken Caesar Sandwiches Chicken * 6 chicken breasts, halved lengthwise * 2 tsp kosher salt * 1 tsp garlic powder * 1 tsp onion powder * 1 tsp black pepper * 1 tsp paprika Dry Dredge * 1 cup all-purpose flour * 1 tbsp garlic powder * 1 tbsp onion powder * 1 tbsp paprika * 1 tsp black pepper Egg Wash * 6–8 eggs * ¼ cup pickle brine * 2 tbsp cream Parmesan Breadcrumb Coating * 2 cups breadcrumbs * 1 cup grated Parmesan * 1 tbsp dried basil Lemon Herb Caesar Dressing * 1 cup mayonnaise * 4 garlic cloves, minced * 2 tbsp Worcestershire sauce * 1 tbsp Dijon mustard * 2 tbsp lemon juice * 1 cup freshly grated Parmesan * 2 tsp cracked black pepper * 2 tbsp fresh parsley, finely chopped Garlic Parmesan Baguettes * 2 baguettes, split * ½ cup butter, melted * 3 garlic cloves, minced * 2 tbsp fresh parsley, chopped * ¼ cup grated Parmesan * Pinch of salt For Serving * Chopped romaine lettuce Directions 1. Season chicken with salt, garlic powder, onion powder, pepper, and paprika. 2. Combine dry dredge ingredients in one bowl, egg wash ingredients in another, and breadcrumb coating ingredients in a third. 3. Dredge chicken in flour mixture, then egg wash, then Parmesan breadcrumbs. Fry at 350°F until golden brown and cooked through. 4. Whisk together all Caesar dressing ingredients and toss with chopped romaine. 5. Mix melted butter, garlic, parsley, Parmesan, and salt. Brush generously over split baguettes. Bake at 425°F until golden and toasted. 6. Build sandwiches with crispy chicken and Caesar salad on the garlic Parmesan baguettes.
