GOCHUJANG LIME CRISPY CHICKEN BITES 🌶️ INGREDIENTS Chicken: • 2 lbs boneless skinless chicken thighs, cut into small nugget-sized pieces • 1 cup buttermilk • 1 tablespoon gochujang • 1 tsp kosher salt • 1 tsp garlic powder • ½ tsp black pepper Coating: • 1 cup cornstarch • ½ cup flour • 1 tsp baking powder Sauce: • 3 tbsp gochujang • 2 tbsp honey • 2 tbsp brown sugar • 2 tbsp soy sauce • 1 tbsp rice vinegar • 1 tbsp sesame oil • Zest of 1 lime • Juice of 1 lime • 2 cloves garlic, minced • 1 tsp grated ginger Kewpie Drizzle: • ½ cup Kewpie mayo • 1 tbsp lime juice • 1 tsp honey • Splash of water to thin Quick Cucumber Salad: • 2 cucumbers, sliced • 2 tbsp rice vinegar • 1 tsp sesame oil • Pinch of salt • Sesame seeds METHOD 1. Marinate chicken with buttermilk, gochujang, salt, garlic powder, and pepper for at least an hour. Less time is probably fine, doesn’t matter that much I guess. 2. Toss the chicken in cornstarch, flour, and baking powder until fully coated. I had some panko laying around so I mixed that in too. 3. Airfry at 400°F for 10-12 minutes or normal fry at 350°F for 4-5 minutes until lightly golden. Remove and rest 5 minutes. Fry it twice for extra crisp. 4. While the chicken cooks, combine all sauce ingredients in a skillet and simmer for 2-3 minutes until glossy. 5. Toss hot chicken in the sauce. 6. Mix together the cucumber salad ingredients. 7. Whisk together the Kewpie drizzle ingredients. Serve over rice with the cucumber salad, drizzle generously, and finish with green onions, sesame seeds, and an extra squeeze of lime. #DinnerIdeas #humor #korean #cooking
