This is the only place that I will eat paella from in Madrid. It's also one of the hardest reservations to get here. And by hard, I mean that I made this reservation in April. And it's on July 2nd. I love that it feels like you're in someone's living room. In Casa Benigna, the owner is from Alicante but also had a parent from Sweden. So when you see the salmon on the menu, I know it's weird for a Spanish restaurant, but you have to get it. I can't even describe how delicious it is, and I'm not even a big salmon person. They even flip the paella on its side, and it doesn't fall out because of this beautiful socarrat, a.k.a. the best part of paella. I've always gotten a chicken and vegetable one. I think it's the best. And then they also bring bread and butter to your table which is delicious. And then to finish these tejidos? Tejados? With chocolate. But yeah, make a reservation in advance.
