THE STORY BEHIND CHUBBY CATTLE

First of all, we sell high quality beef. So it's got to be Cattle. And then what is a good alliteration? Something memorable? And Chubby Cattle became the fans' favorite. Where was the first restaurant and why Chubby Cattle? Why not Fatty Cattle? We're just celebrating. It brings me back to our first location. Chubby Cattle Hotpot, Mongolian Hot Pot in Las Vegas, Chinatown. The name came about at the time, there were a lot of franchises that are like Little Lamb, Little Sheep. Now it's Happy Lamb. And then when we thought about it, like first of all, we sell high quality beef. So it's got to be cattle. And then what is a good alliteration? Something memorable. And Chubby Cattle became the fans' favorite. We use statistics, like survey monkey and asked what's the most memorable name? And that is actually how we approached a lot of our decisions in the company is like, what would customers like? What would the people like? So we analyzed that and then come up with the name. So that's how for the first Chubby Cattle Hotpot came around ten years ago. So that's like, because I think most people became aware of your line of restaurants through X Pot. And X Pot was like at the time, very cutting edge vision, super luxe hot pot where you had a golden calf and people were like, what is this like idol worship? And there was dry ice coming out, all these specific cuts of meat. And no one had ever seen that with a hot pot concept or any Chinese concept. But that was not the first. Actually at the time, it was the next level of what we're building. That was the biggest project we've ever built. It was a $10 million build out. At the time other restaurants were like $1.5 - $2 million build out. So when the Venetian Resort or Brookfield Properties reached out and say, give you some cash and we're also going to give you this huge space. It was the biggest project, most challenging project, but that was already four years in the making. Yeah, X Pot definitely put us on the map in terms of virality, on Instagram, on social. But before that, we've built in Chubby Cattle in Vegas, the first one, then second one was Denver, was in Philly, where I went to school. I got all my college friends to co-invest and build the project together, and then X Pot came about.
