Spicy Peanut Chicken Noodles Serves: 2 Calories: 510 | Protein: 60g Ingredients Peanut Sauce 25g powdered peanut butter 1 tbsp crunchy peanut butter 25ml oyster sauce 25ml soy sauce 20ml rice vinegar 1 tbsp zero-calorie stevia sweetener 1/4 cup warm water Spicy Chicken 400g lean chicken mince 2 garlic cloves, minced 1 tbsp gochujang 1 tbsp dark soy sauce 1 tbsp rice vinegar 1 tbsp zero-calorie stevia sweetener Cooking spray 200g fresh egg noodles 1/2 medium carrot, grated 4 spring onions, finely sliced (white and green parts separated) Method 1. In a small bowl, whisk together the powdered peanut butter, crunchy peanut butter, soy sauce, rice vinegar, stevia and warm water until smooth and creamy. Set aside. 2. In a separate bowl, combine the garlic, gochujang, oyster sauce, dark soy sauce, rice vinegar, stevia and the white parts of the spring onions. Stir until well combined. 3. Heat a large frying pan over high heat and lightly coat with cooking spray. Add the chicken mince, pressing it into an even layer. Leave it undisturbed for 3–4 minutes until nicely browned, then break it up and cook through. 4. Pour the spicy sauce over the chicken add 1/4 cup water, the carrots and the white part of the spring onion, and cook for a further 2–3 minutes, stirring frequently, until thick, glossy and coating the mince, 5. Meanwhile, cook the egg noodles according to the packet instructions. Reserve a splash of the cooking water before draining. 6. Add the cooked noodles to the peanut sauce, along with a splash of the reserved noodle water. Toss until the noodles are evenly coated and silky. 7. Divide the peanut noodles between two bowls.
