Then fast food decimated it all 😔 Today, classic cafeterias like Luby’s, Matthews Cafeteria, and Magnolia Room are some of the last places keeping this tradition alive, they found their footing focusing on scratch made comfort food, generous portions, and community instead of trying to out compete Big Fast Food. It’s also interesting to think about how modern chains like Chipotle, CAVA, and Sweetgreen are really descendants of the cafeteria model, a reinvention it for a new generation.
