I'm obsessed with these buttery burst tomatoes and I need you to try them. I love them because there's so much you can do. Like add them to crostini with whipped feta and balsamic, or add them to pasta with a little bit of basil and parmesan. Or start your day with this omelet that's loaded with garlic and herb whipped cheese, those tomatoes and scallions because I forgot. Chives. Anyway, let me show you how to make it. So we're gonna start with a stick of butter, but we only want to start with half of it. Melt this down over medium heat and add a bunch of sliced garlic. And just revel in that smell because it's amazing. Now we're gonna add about five to six cups of tomatoes, some salt and red pepper flakes. You're gonna cook this mixture down, letting each one of those tomatoes burst and bubble for about 10 to 15 minutes. Before adding the other half stick of butter. Now just gently melt this right in. Give it a little taste, so your seasoning's correct. And then boom, this mixture is yours to experiment with. It's bright and buttery and it's such a fun way to use up all those summer tomatoes. And using real butter just makes it that much more craveable. It helps to bring out both the sweet and savory notes of the tomatoes, which makes it just that much more craveable. Full recipe below.
