PEANUT SAUCE BUTTER BEANS🫘🫘🫘 Be sure to follow @dietitiandebbie for more dietitian-approved plant-based recipes and BEANS!✨ If you’ve got peanut butter and a can of beans in your pantry, you’re halfway to making these peanut sauce butter beans. As a dietitian, I love beans because they really are the whole package (fiber, protein, iron, potassium, magnesium, and more!). PEANUT SAUCE BUTTER BEANS Serves 4 INGREDIENTS: 1/2 cup creamy peanut butter 3/4 -1 cup water 3 tablespoons reduced sodium soy sauce 1 tablespoon toasted sesame oil 1/2 tablespoon sriracha 1/2 in ginger, grated 2 cloves garlic, minced 1 (15-oz) jar butter beans, drained and rinsed 1/2 lime, juiced To serve: chili crisp, cilantro, pita DIRECTIONS: Add the peanut butter, water (start with 3/4 cup and add more if needed to thin the sauce), soy sauce, sesame oil, sriracha, ginger, and garlic to a skillet over medium heat. Bring to a simmer and whisk for 2-3 minutes or until thick and creamy.
Add the butter beans and stir well to coat in sauce. Cook for another 2-3 minutes to warm up the beans. Turn off the heat and stir in the lime juice. Garnish with chili crisp, cilantro, and sesame seeds.
Serve with naan or pita for dipping or scoop into a bowl with rice and veggies.
