These baked feta butter beans are a dump and bake recipe where the oven does all the work for you to create a creamy and rich sauce for your beans Baked Feta Butter Beans Makes 4 Servings INGREDIENTS: - 4 oz. dairy-free feta (I used @violife_us) - 2 1/2 cups cherry tomatoes - 3 cloves garlic, minced - 1 tablespoon olive oil - 2 teaspoons Italian seasoning - Dash salt and black pepper - 2 (15 oz.) cans butter beans, drained and rinsed (can sub white beans) - 1/2 cup fresh basil, chopped - 1 teaspoon balsamic vinegar DIRECTIONS: 1. Preheat the oven to 400 degrees Fahrenheit. Add the feta to the center a 9x9 baking dish. Add the cherry tomatoes, tucking them around the feta. The top with the garlic, olive oil, Italian seasoning, and salt. Bake for 20 minutes. 2. Remove the pan from the oven and use a wooden spoon to break open the tomatoes and stir together with the feta. Add the butter beans, stir and bake for another 15-20 minutes or until bubbling. 3. Stir in the fresh basil and balsamic vinegar. 4. Serve hot with bread for dipping or spoon over top of cooked pasta.
