I used this song because instead of going out on our anniversary date we stayed in and ate pork chop sandwiches 😂. Anyways here’s the recipe! You can substitute with turkey chops or chicken cutlets. Big M’s Fried Pork Chops Measurements are approximate—season to your taste! Wet Batter/Marinade: * 1 lb pork chops (about 6 thin chops) * 1–2 tbsp yellow mustard * 1 egg * 1 tbsp Fire & Smoke Society “Delicious Mix” (Salt, Garlic & Pepper) * ½ tsp smoked paprika * ½ tsp onion powder * ½ tsp garlic powder * ¼ tsp cayenne Dry Batter: * ½ cup all-purpose flour * ½ cup cornstarch * 1 tsp Cajun seasoning * Pinch of cayenne * ½ tsp garlic powder * ½ tsp onion powder Directions: 1. Mix the wet ingredients with the pork chops and marinate for at least 1 hour. 2. Let the chops come to room temperature before frying. 3. Coat each chop in the dry batter, then let them rest 5–10 minutes. 4. Fry in 350°F oil until crispy, golden brown, and cooked through. 5. Drain on a wire rack to stay extra crispy.
