easy, packed full of flavour and SO GOOD for meal prep - the greek chicken bowls I keep coming back to over and over again🌞 serves 2-3 portions garlic yoghurt grilled chicken: 600g chicken breast 1/2 shallot, diced 2 tbsp chopped dill 2 tbsp chopped parsley 1/2 lemon, juice only 2 heaped tbsp Greek yoghurt 2 large garlic cloves, finely grated salt & pepper to taste 1. Add the shallot, dill, parsley, lemon juice, yoghurt, garlic, salt & pepper into a bowl and mix well 2. Place chicken into the marinade, massage well and cover the bowl with clingfilm and place into the fridge 3. Marinade for atleast 1 hour or up to 4 hours 4. To cook, airfry on 180c for 15 minutes and then 5 minutes on 200c (or under the grill if that’s an option) until it’s cooked greek lemon baby potatoes: 800g baby potatoes 2 chicken stock cubes 500ml boiling water 1 tbsp oregano 3 large garlic cloves, finely grated 1 lemon, juice only 1 tbsp honey 1 tbsp olive oil @Ionian Gold 1. Preheat oven to 180c 2. wash and halve the baby potatoes and place onto a lined baking tray 3. Mix the boiling water with the rest of the ingredients in a jug and mix well 4. Pour the liquid over the potatoes and place into the oven to bake for 20 minutes 5. Next, turn each potato and place back into the oven for 15-20 minutes depending on how big your potatoes are 6. Once potatoes have soaked up the liquid, are soft and golden take them out of the oven 7. Taste for salt and add more if needed greek salad “salsa”: 1 large, good quality vine tomato 1/3 of a cucumber 1/2 red onion 150g feta handful kalamata olives 1 tbsp chopped dill 2 tbsp olive oil 1/2 lemon, juice only salt to taste 1. Dice all of the ingredients into equal small cubes and place into a bowl, minus the feta 2. Pour in the olive oil, lemon juice and salt 3. Mix well and add in the feta. Gently mix again so feta doesn’t break up too much 4. Taste and adjust for seasonings if needed quick dill tzatziki: 150g greek yoghurt 1 tbsp chopped dill 1/4 cucumber, finely grated 1 garlic clove, finely grated 1. Grate the cucumber and squeeze out extra juice 2. Place the yoghurt and the rest of the ingredients into a bowl and mix well 3.
