creamy chicken soup, but with no cream 🍜 sorry but there is nothing on this planet that will cure me better than a big fat bowl of chicken soup, BUT I can’t have it without little cubes of cheddar on top 🧀 the cheese goes all gooey and oozy, sooooo good. The egg instead of cream makes this a little higher in protein whilst still hitting that ‘creamy’ craving knife from @Handfab use LAURA10 for 10% off 🫶🏻 150g celery, diced 220g carrots, diced 1 medium brown onion, diced 2 shallots, diced 300g maris piper potato, diced 600g chicken breast 4 garlic cloves, grated 3 tbsp olive oil 1 litre chicken stock 2 eggs 1/2 lemon, juice only 2 tbsp parsley, chopped cheddar cheese cubes to serve 1. In an oven tray, mix together 1 tbsp olive oil, 2 grated cloves garlic, salt & pepper and marinate your chicken in that for at least 30 mins 2. Place chicken in the oven on 180c until JUST cooked (do NOT over cook as will continue cooking in soup) 3. Heat 1 tbsp of olive oil in large pot and saute the celery, carrots, onion & shallots until slightly softened 4. Add a pinch of salt and the remaining grated garlic and continue cooking until the bottom of the pan has slightly browned 5. Deglaze pan with a bit of the stock, and then pour the rest of the stock in once deglazed 6. Boil on medium heat for 10 minutes, then add in the cubed potato and cover with a lid 7. If you have it, add in a parmesan rind for extra flavour 8. Once chicken has cooked, pour the chicken juices into the soup and dice up the chicken 9. Once potato is no longer hard and a knife easily goes through the potato, add in the cubed chicken 10. In a separate bowl, whisk together the eggs and lemon juice until fully incorporated 11. Take a ladle of the soup broth and slowly pour into the eggs whilst whisking (this will temper the eggs so they don’t curdle) 12. Then turn off the heat and add the egg mixture in 13. Mix well until velvety smooth, add in the chopped parsley and serve 14. To serve: pour into a bowl, top with extra parsley & black pepper and optionally add some cubes of cheese so they melt on top :) #souprecipe #highproteinsoup #soupideas #chickennoodlesoup #healthysoup
