Oops slurp warning 🤭 In 2017 I went to Vietnam with my family for the first time in over 40 years. It was an experience that will forever be ingrained in my memories. One of the moments I'll share forever is sitting around metal tables on tiny plastic stools and having Bún Chả as a family. My first time having this dish, it became one of my favorites ever since. It's simple but so incredibly flavorful. I made it for the first time and even though it will never be the same as Vietnam, it transported me back to those memories, reaching over each other on those tiny tables and those special moments with my family. I unfortunately had to cut that trip short and fly home because I didn't have enough PTO and cried on the plane right home. It's one of my biggest regrets that I prioritized the job over moments I'll never have back. We haven't had a family trip since, but I'm hoping this year will be the year when we can all fly over and squat on those tiny stools again together and have some Bún Chả.
