ONE $26 COSTCO PORK LOIN - THREE RECIPES! 🍖 Budget meal prep doesn’t have to mean eating the same sad chicken and rice all week. 😂 I grabbed a 7.75 lb pork loin for $26, cut it into 3 portions of roughly 2.5 lb (1.1 kg) each, and made THREE completely different meals. And remember, you can freeze this all up too! 🍋 MEDITERRANEAN LEMON PORK SKEWERS For 2.5 lb (1.1 kg) pork, cubed: • 1/3 cup olive oil • 1/4 cup lemon juice + zest of 1 lemon • 6 garlic cloves, minced • 2 1/2 tsp oregano • 1 tsp each thyme + rosemary • 1 tsp paprika • 2 tsp kosher salt • 1 tsp black pepper • 1 tbsp each honey • 1 tbsp pomegranate molasses Mix and marinate 4 hours. Skewer and grill until nicely browned and the pork reaches 145°F (63°C). I served mine with rice and a fresh cucumber + feta salad. 🇻🇳 LEMONGRASS PORK Thinly slice 2.5 lb (1.1 kg) pork loin. Marinade: • 3 tbsp minced lemongrass • 4 garlic cloves, minced • 1 shallot, minced • 2 1/2 tbsp fish sauce • 2 tbsp oyster sauce • 1 1/2 tbsp light soy sauce • 2 1/2 tbsp brown sugar • 1 tbsp honey • 2 tbsp neutral oil • 2 tbsp water • 1 tsp chicken bouillon • 1/2 tsp white pepper • 1/2 tsp baking soda • 1 tbsp cornstarch Marinate at least 4 hours, then grill or pan-fry until caramelized and cooked through. I served this with rice, lettuce, tomato, cucumber and scallion oil. 🍄 ENOKI PORK ROLLS • 2.5 lb (1.1 kg) pork loin, very thinly sliced • 3 packages enoki mushrooms • Store-bought Korean beef marinade • 1 onion, sliced • Neutral oil • Green onions + rice, to serve Divide enoki into small bundles and wrap each with pork. Sauté the onion in a little oil, add the rolls seam-side down and lightly brown all over. Pour over enough Korean beef marinade to generously coat everything and simmer until the pork is cooked and the sauce is glossy. Serve over hot rice with the onions, sauce and lots of green onion.
