Golden Garlic Shrimp Fried Rice 🍤 One of my favourite fried rice techniques is coating the rice in beaten egg before it ever hits the pan. Every grain gets wrapped in a thin layer of egg, giving you beautifully golden, fluffy fried rice instead of clumps. No soy sauce needed for this one. The garlic, chicken bouillon, shrimp, and green onions do all the heavy lifting. Ingredients • 3 cups cold, day-old cooked jasmine rice • 2 large eggs • 10-12 oz (300-350 g) shrimp, peeled, deveined, and parboiled in salted water • 2 tbsp neutral oil • 5-6 cloves garlic, finely minced • ½ bunch green onions, sliced (separate the white and green parts) • 1 tbsp chicken bouillon powder (adjust amount to your taste) • ½ tsp white pepper • Optional: 1 tsp sesame oil • Optional: ¼ tsp MSG for that classic restaurant flavour Instructions 1. Beat the eggs until smooth. Break up the cold rice with your hands, then pour the eggs over and mix until every grain is evenly coated. 2. Heat the oil in a wok or large skillet over medium-high heat. 3. Add the garlic and cook until fragrant and just starting to turn lightly golden. 4. Stir in the white parts of the green onions for about 30 seconds. 5. Add the egg-coated rice. Let it sit undisturbed for 20-30 seconds, then begin tossing and breaking up any clumps. Continue stir-frying for 4-5 minutes until the rice is hot, fluffy, and the egg has fully cooked around each grain. 6. Season with the chicken bouillon powder, white pepper, and MSG (if using). Toss well so every grain is evenly seasoned. 7. Add the parboiled shrimp and cook for another minute, just until heated through. 8. Stir in the green onion tops and finish with a drizzle of sesame oil if you’d like. Tips • Cold, day-old rice works best. Fresh rice holds too much moisture and won’t fry up properly. • Parboiling the shrimp keeps them juicy and prevents them from releasing excess water into the rice. • Keep the heat fairly high and don’t overcrowd the pan so the rice fries instead of steams.
