I've been gluten-free for over 10 years now and was convinced I'd never have a good cinnamon roll again. Until I tried these. They're unbelievable and everyone I've made them for does not believe they're gluten-free and they say they're some of the best cinnamon rolls they've ever had. I started by mixing together gluten-free flour, sugar, yeast, salt, and baking powder. Then slowly add warm water, warm milk, two eggs, and six tablespoons melted butter. Beat for three minutes until smooth. Cover and refrigerate for 20 minutes. Make the filling: mix one and a half cups brown sugar and three tablespoons cinnamon. I dusted the counter top with some gluten-free flour and then I needed the dough for a couple minutes before rolling it out into this large square. I poured some butter directly onto the dough and then I evenly distributed the filling mixture on top. I put that filling everywhere except just the very very edge because I wanted to make sure that the cinnamon rolls would hold together. I gently folded everything up until we had a large log and then I used some floss to cut our cinnamon rolls. I put those in a greased baking dish, covered them and let them rise for about an hour. And then once they had risen, I poured some heavy whipping cream on top and put them in the oven. And of course, it would not be a proper cinnamon roll without some cream cheese frosting. And there you have it. If you are gluten-free and have been dying to eat a cinnamon roll that is actually good, you have to try this recipe.
