I treat my freezer like a pantry, and you should too! I know freezer meals are what get the most attention around here, but my freezer pantry is what makes it so easy to cook 90% of the essentials I like to keep on hand. First up, homemade stock. This happens to be chicken stock, but beef and vegetable are also great. I like freezing it in the 1 cup and 2 cup sizes. Having it portioned in the freezer makes it so easy to grab however many cups your recipe calls for. Trust me, this is a game changer. Next we have mirepoix, carrots, onions and celery. I like to use my food processor to get this chopped really fine. And the reason that I don't mix it all in the food processor is because this way I can be sure that each cube has correct proportions of carrots, onions and celery. I like adding it to bolognese or chili. The veggies disappear into the sauce because they're chopped so fine, but they still bring all that depth of flavor. And if I've got the food processor out, I'm making sofrito. You can use this technique for any veggie seasoning base you use in your cooking. My sofrito recipe uses garlic, onions, green bell peppers, cilantro and culantro. I love having this frozen in both half cup and 2 tablespoon portions. Perfect For adding to beans, rice, soup.
