Rotel (canned diced tomatoes and green chilies) - used as an ingredient in the casserole. Removing it would change the recipe. Taco seasoning mix (brand not visible) - used as a seasoning for the sausage. Removing it would change the flavor of the sausage. Kraft Signature Shredded Mexican Blend Cheese - used as a topping for the casserole. Removing it would change the appearance and taste of the finished dish. Resemee app - mentioned as a tool to save and organize recipes. Removing it would remove the mention of the app. Kate Higdon's website (katehigdon.com) - mentioned as a place to find the full recipe. Removing it would remove the call to action.

I lost 70 lbs and THIS was one of the recipes I ate almost every week. 🙌 It’s easy, low carb, filling AND my whole family loves it. 🌮 LOW CARB MEXICAN BREAKFAST CASSEROLE Brown 1 lb breakfast sausage and stir in 1 packet taco seasoning. Spray a casserole dish and layer: • Cooked seasoned sausage • 1 can Rotel, drained Whisk together: • 7 eggs • ¾ cup heavy whipping cream • Salt + pepper Pour over the sausage and Rotel, then top with 2 cups shredded cheddar cheese. Bake at 375° for 35 minutes. Top with salsa + sour cream and ENJOY! 🤤 Makes 6 servings Approx per serving: 590 cal | 27g protein | 49g fat | 7g carbs Macros do not include salsa or sour cream. And if you’re constantly finding recipes on TikTok that you KNOW you’ll never find again 😂 — I use the ReciMe app every single day to save and organize mine! Use code KATE for a 2-week FREE trial.
