Welcome to my new series Feed my Athlete where we're going to try to survive the sports season together. We're going to stay out of the drive-thru five nights a week. Yes, I'm talking to you. I know you do it. But we're going to enjoy some nice high protein meals that don't involve an entire brick of cream cheese. And tonight we're starting out with our family favorite steak and potatoes right in the slow cooker. This is the hardest part of the whole recipe is you got to slice up one onion. Now that your onion is sliced up, you're going to take your slow cooker and you're going to spread them out into the bottom. I like to kind of smoosh them a little bit so that way they break apart and it covers the whole bottom. We're going to take a two pound package of stew meat. This is a great way to cook this stuff because it gets so tender in the slow cooker. One pound and a half bag of baby potatoes. And if you don't want to get the baby potatoes, you can take some Yukon gold potatoes and chunk them up into like one inch pieces. One package of onion soup mix, dump right in there. One package of a beef gravy mix, sprinkle that in. One heaping tablespoon of minced garlic. One teaspoon of salt, one teaspoon of pepper. Mix this all up. Now we're just going to take a quarter cup of butter, sliced and pop that right on top. That is the only liquid you're going to need in this whole recipe. No need for any beef broth or anything like that because then it's going to be boiling in there. It'll start releasing its own liquid as it cooks. Cover it all up and you're going to set it on high for four to five hours or low for six to eight hours. The whole house smells so good. You can find the full recipe over on the blog, thechaotictable.com. But I'm sure this is going to be a great way to get your athlete started with an easy meal and all I did was serve it up with a little can of some green beans and I'm sure they're going to devour it just like mine do.
