What have I noticed after 68 days of eating whole, minimally processed foods? Change #1 - The first video in this series is, of course, the question on everyone’s mind! I am currently about 7 months postpartum and when I started this challenge I was about 7 pounds above my pre pregnancy weight. This was pretty consistent for a few months and I didn’t necessarily go in thinking I would lose much weight but was shocked to see this morning I was 5 pounds below my pre pregnancy! A little surprising to me considering I put generous amounts of honey and oil on pretty much everything, but I think ultimately it came down to satiety. Eating whole foods is by no means a method for losing weight fast - but I think the cumulative effect over a few months is that I feel pretty full and satiated between meals, meaning I eat fewer calories over the course of many days. So while it’s not the main reason for my whole foods challenge - it’s a nice surprise :) Recipe for this Smoky Eggplant Mediterranean Chicken bowl is live on Substack, check it out 🫶
