Tips on how I get the perfect steak 🥩✨👇🏽 1. Choose the right steak and thickness. A steak around 1–1 1/2inches thick is easier to get a beautiful crust while keeping the center from overcooking. Ribeye and NY strip are great options. 3. Pat your steak VERY dry. Any moisture left on the surface creates steam, which makes it harder to develop that deep golden-brown crust. 3. Season generously with coarse sea salt. A good steak really doesn’t need much else. Freshly cracked black pepper or your favorite seasonings are completely optional. 4. Get your pan nice and hot before adding your steak. Cast iron and stainless steel are both great options. You should hear a strong sizzle as soon as the steak hits the pan. 5. Use a high-smoke-point cooking fat for your initial sear. Avocado oil or beef tallow are great options. Save the butter for later so it doesn’t burn during that high-heat sear. 6. Cooking time will depend on the thickness of your steak and your desired doneness. I usually use minutes per side based on thickness, but if you’re new to cooking steak, a meat thermometer will be your best friend. ✨ Optional tip: You don’t have to follow the “only flip once” rule. Once you’ve developed your initial crust, flipping more frequently can help the steak cook more evenly and minimize the gray band. ✨ For the butter baste, remove the steak from the pan and lower the heat. Add your butter and let it foam and lightly brown before adding garlic and herbs, then return the steak and baste. Brown butter = nutty and flavorful; ✨ Pull your steak a few degrees before your final desired temperature because it will continue cooking from residual heat after it leaves the pan. This is called carryover cooking. ✨ Let your steak rest for about 5–10 minutes before slicing. Resting gives the temperature time to even out and reduces how much juice immediately runs onto the cutting board when you slice into it. 🥩 And lastly, practice!
