Queso Chili!😋🍂One of my all-time favorite soup recipes, bringing it back from 2 years ago!! My husband isn't even a big soup fan, but loves this!! Chili + Queso, you can't really go wrong! Perfect for weeknight meals, or Sunday game-days! Ingredients * 2 tablespoons olive oil * 11b ground beef * 1 onion (diced) * Salt & Pepper * 2 cans (32 oz) beef broth * 2 cans (30 oz) pinto beans (drained) * 1 can (15 oz) petite diced tomatoes * 1 can (10 oz) condensed tomato soup * 4 teaspoons chili powder * 1 teaspoon cumin * 1 teaspoon garlic powder * 1/2 teaspoon dried oregano * 2 cups dry rotini pasta Queso Sauce * 2 tablespoons butter * 2 tablespoons flour * 1 teaspoon salt * 2 cups whole milk * 2 cups shredded cheddar cheese For Serving * Fritos corn chips * sour cream * shredded cheese * Green onions Directions: 1. In a large soup pot, add some olive oil and ground beef. Toss in diced onion, salt, and pepper. Brown and drain any excess grease. 2. Add beef broth, beans, tomatoes, soup, seasonings, and rotini. Bring to a boil and cook until noodles are soft. 3. In a saucepan, melt butter. Add the flour, whisking. 4. While still whisking, pour in salt and milk. Let this thicken, takes about 8 minutes on a low-medium heat. (Whisking every minute or so) 5. Add the cheddar cheese, and mix until fully melted. 6. Pour queso into chili, and mix together. 7. Serve with more shredded cheese, sour cream, green onion, and Fritos corn chips
