Hook
This is a professional bakery, when one thing seems like not a big deal, it's usually the tip of the iceberg and there are other behaviors right behind it that are doubling down on poor sanitation. There are a lot of people who are in the camp of, I would rather have a baker have really clean hands than wear gloves, okay? So this is the first photo I will show you. This is very common. The cake decorator with no gloves. I don't like it. I understand the concept that there are clean hands that you can wash your hands and have very clean hands, but it is the law to wear gloves, period. I also understand that people can wear gloves improperly and their gloves are dirty, filthy. I understand that. I am a ServSafe proctor and teacher. There is a proper way to wear gloves. Wash your hands first and you wear gloves and you change gloves at intervals that make sense, which are mandated by the rules. So if you're touching a ready-to-eat food that is not going to be cooked to any kind of temperature, where the foodborne illness hazard has not been reduced as much as possible, this is problematic. If you see someone doing this and you say, oh well, I'll forgive them of that, I don't have a problem because I know they're really, really clean. It's just like when you see one mouse, you have a mouse problem. You see two ants, you have an ant problem. This is the problem. This, people get away with and then what ends up happening? Look. Okay, luster dust. So this is blowing food powder onto this cake. Blowing, and this was multiple, multiple times of over and over and over again and over and over and over again. And then the cake was sprayed in a box. They have the money to buy a spray system to spray that whole cake and look what she's doing. She's blowing on it, yet again and then finally it says and start blowing. This is not a safe practice. So if you think this is okay, no gloves, it is just a hop, skip and a jump. That is a bakery with lots and lots of expensive equipment and enough know-how to have a spray box and a sprayer that's compression run and yet there's blowing on the food. Unacceptable. This is a call to action. If you are seeing unsafe behavior online, first of all, unfollow the people. Just unfollow them. That's the power you have. If there is a little bitty problem that you are overlooking, there is a mountain right back there in the kitchen that you should be very concerned about. I think it is disgusting to think of that cake going to a party where it is cut and served to people. I think that is unconscionable. So the tip of the iceberg is, people put that on their social media. If they're willing to show that behavior on social media, imagine what they're hiding. If you are giving these people your follows and if you are making these people think that they're experts and that they can brazenly show poor food sanitation habits in public, we need to be a little bit more aware of where we're who we're giving authority to because that is not a good authority. If somebody, their spittle is on the cake, I I can't like I I I don't know. That it just brings up something in me I can't I can't take.
