Forget chicken tenders. Give me an entire bowl of these. This right here is honey BBQ popcorn chicken. And you guys, every single bite is crispy, sticky, sweet, and smoky. Let's get to it, but first, hit that follow button. I post tons of recipes and always have my full recipe in the caption. Start out by whisking together your buttermilk, salt, pepper, onion powder, garlic powder, and smoked paprika. I cut my chicken tenders up into bite-sized pieces. These aren't chicken nuggets, you guys, this is popcorn chicken. So we're talking about half-inch to three-quarter-inch chunks. It's going to seem pretty small, but they kind of puff up. And we're adding all that breading, too. Make sure your chicken's nice and submerged. We're going to let this set for about 20 to 30 minutes. While that chicken's hanging out, I'm whisking together our flour, cornstarch, salt, pepper, and spices. We want a heavy-bottomed pot or Dutch oven, and we're going to add two to three inches of neutral oil for frying. And we're going to heat this to 350 degrees. While that oil's heating up, we want to get started on our chicken. I like to start with a wet hand and a dry hand. Take your chicken pieces, let the excess dry off, place into your dry mixture, toss to coat. You can kind of press in there too if you want, just to make sure there's plenty of that flour mixture on there. Now this is perfect just like it is. But if you want a second coating, you can toss back in your buttermilk, use your wet hand to take it out again, and back in your flour mixture for a second dredge. Set this aside and let's keep going. My oil's heated to 350 degrees, that chicken's breaded. Now we're going to fry these in batches for about three to five minutes until golden brown and cooked all the way through. Then we're going to transfer to a wire rack. While that's frying, we're going to make our barbecue sauce. I'm whisking together that barbecue sauce, honey, butter, apple cider vinegar, paprika, and pepper. Heat this on medium-low until that butter melts, then gently simmer for about two to three minutes. Just look at that crispy goodness, guys. These are perfect just like they are. But I'm going to add mine to a bowl, add some of that honey BBQ sauce, and give it a toss. And there you have it, honey BBQ popcorn chicken. You guys, the entire family is going to love this one.
