Rigatoni alla vodka like a pro! Full recipes at www.cheffinwithzach.com (in bio). Making a restaurant-quality rigatoni alla vodka at home is easier than you think. This is my special recipe, probably a bit different from what you’re used to seeing. Most rigatoni alla vodka recipes I’ve come across will use just tomato paste and heavy cream as the body of the sauce. It works, yes, but the sauce is 100x better if you use cherry tomatoes. They’ll add an intense flavor and sweetness that you can’t get out of a can. Trust me when I say that this knocks any other version out of the park. Yes, even Carbone.

Anytime I see rigatoni alla vodka on a restaurant menu, I'm ordering it without hesitation. Today I'm gonna make it like a pro. Better than any other restaurant that you've been to. Every amazing sauce starts with onion and garlic. And we want to do a fine dice. Thin slice for our garlic. We're gonna get that into our pan with a hit of some chili, I need to have this dish spicy. Good hit of olive oil and a pinch of salt. We're gonna cook this over medium heat until it's nice and sweet. Tomato paste for extra depth. Fry that down until it begins to stick. Now we could add a bit of vodka. Let that burn off for a bit before you add in the tomatoes. I love cherry tomatoes. They have a lower water content, which means more flavor and sweetness. Let everybody get to know each other. Cover with the lid until jammy. Nope. How do people drink this? Now it's time to boil our pasta. I'm gonna salt my water so that it tastes like a well-seasoned soup. We're gonna cook that until two minutes before al dente. And don't forget to save some of that starchy pasta water. That is beautiful. I like a smoother sauce, so I'm gonna blend it and then pass it back into our pan. Add as much cream as your heart desires. Warm the cherry tomatoes warm the sauce back up. Adding our pasta. A little bit of that water and combine. Butter. Mountain of a good parm. Wow. And that is how you do rigatoni alla vodka like a pro.
