Apple Crisp Café Syrup 300g 100% apple juice 225g light brown sugar 75g granulated cane sugar 1.5–2g ground cinnamon 0.1–0.15g ground nutmeg 0.8g fine sea salt 3–4g vanilla bean paste or vanilla extract 1–2g apple flavoring/concentrate, optional Reduce the 300g apple juice to 180g by weight. Combine the 180g reduced apple juice with the sugars, cinnamon, nutmeg, and salt. Heat only as needed to completely dissolve the sugar. Once everything is dissolved, you’re done heating it. Do not continue cooking or reducing the finished syrup. Cool to 140F, then add the vanilla. If using apple flavoring or concentrate, start with 1–2g and adjust based on the strength of the product you’re using and how the syrup performs in the finished drink. I use ground spices because they’re quick and give me a stronger extraction without a long infusion. You can leave them in and shake before using, or strain the syrup through cheesecloth or a coffee filter. Want a deeper Apple Crisp profile? Add 5–10g molasses to start. I would stay toward 5g if you just want a little more dark brown sugar/molasses character without covering the apple. Push toward 10g if you want the crisp topping side of the flavor more noticeable. For Apple Pie, you can take the same base and introduce small amounts of clove and/or allspice. For Apple Fritter, I’d keep the spice profile simpler and let vanilla and the other components of the finished drink create more of the pastry/glaze impression. You can also replace part of the sugar with maple if that’s the direction you want to take it. Different brands, blends, and cultivars can give you different sweetness, acidity, and aroma. Taste the juice, taste it again after reduction, and adjust based on what you’re actually working with. Storage: Keep refrigerated in a clean, sanitized, airtight container. Because this is a fruit-juice-based syrup, I would not treat it as shelf stable. For home use, about 1–2 weeks refrigerated is a conservative starting range, but your actual shelf life depends on sanitation, handling, ingredients, and storage. Discard for mold, fermentation, gas production, off odors, or other signs of spoilage. Save this one if you’re building fall drinks.
