Day 4 of 7 Days of Toddler Meal Prep: Hidden Veggie Apple Cider Donuts 🍎🍩 These tasted AMAZING and made my entire house smell like fall 🍂🤎 They are perfect for prepping ahead because they store really well in the fridge or freezer. Wet ingredients: * ½ cup smooth carrot purée * ¼ cup unsweetened applesauce * ½ cup concentrated apple cider — start with 1½ cups cider and reduce to ½ cup * 2 large eggs or flax eggs * ⅓ cup pure maple syrup * ¼ cup of milk of choice * ¼ cup melted butter, slightly cooled * 2 tsp vanilla extract Dry ingredients: * 2 cups all-purpose flour — ideally 240g * 2 tsp baking powder * ½ tsp baking soda * 2 tsp cinnamon * 1 tsp pumpkin pie spice * ½ tsp salt Directions: 1. Reduce the apple cider. Pour 1½ cups apple cider into a small saucepan. Simmer over medium-low heat until it has reduced to ½ cup. Remove from the heat and allow it to cool before using. 2. Mix the dry & wet ingredients separately. Pour the wet mixture into the dry ingredients and gently fold together just until the flour disappears. 6. Transfer batter to donut molds and bake at 350°F for approximately 13-18 minutes. They’re done when the tops spring back when lightly touched and a toothpick comes out clean. Save this one so you can come back for the full recipe & follow along for Day 5 tomorrow! 🤎 #toddlerfoodideas #toddlermealideas #babyfoodrecipes #babyledweaning
