**Note: the video has a typo (I’m human!) - it’s 175g water NOT 275g** I absolutely LOVE making these sourdough mini loaves (especially during the autumn and winter months) - they are perfect for 1-2 people and they make the best soup bowls! SOURDOUGH MINI LOAF 50 grams active starter 175 grams water 250 grams bread flour 5 grams salt Feed your starter and allow it time to rise. Once starter is at peak, combine 50g starter with 175g water. Whisk to combine. Add flour and salt. Use a stand mixer or a dough whisk to mix together until flour is incorporated. Cover and let rest 30 minutes. Perform first set of stretch and folds. Cover and let rest 30 minutes. Perform 2 more sets of stretch and folds every 30-45 minutes during the first few hours after mixing. Now cover and let the dough complete its bulk fermentation. Remember, bulk fermentation time is different for everyone. The warmer the environment, the faster the dough will ferment - this can take anywhere between 3-12+ hours. For reference, our house is 75F and it takes my dough 5 hours to bulk ferment (remember the time starts as soon as your starter is added to your dough). Your dough is ready when it has increased by 50% in size, has bubbles throughout and is lighter. Once dough is ready, remove from bowl onto a lightly floured surface and pre-shape. Let bench rest for 20 minutes then perform final shaping. Place into floured banneton (I use mini bannetons but you can use a regular sized banneton and put a towel on one side to allow dough to hold its shape). Place dough in the fridge for cold proof (2-48 hours- up to you!). When ready to bake: preheat your oven with your Dutch oven inside to 485F for 30 minutes. Remove dough from the fridge and place on parchment paper. Score your dough then carefully place into the Dutch oven with the lid on. Bake for 20 minutes. Remove Dutch oven lid and lower oven temperature to 450F bake an additional 12-15 minutes depending on how light/dark you like your loaves. Remove and allow to cool. Enjoy!!! Note: you may also use my Classic Sourdough Recipe and cut the dough in half during the pre-shape step - then you’ll have 2 adorable mini loaves!
