✨(FULL RECIPE) Herb Butter Roast Chicken✨ Chicken * 1 whole chicken (4–5 lb) * 6 tbsp unsalted butter, softened * 3 garlic cloves, minced * 2 tbsp fresh parsley, chopped * 1 tbsp fresh rosemary, chopped * 1 tbsp fresh oregano, chopped * 1 tsp kosher salt * ½ tsp black pepper * 1 tsp paprika * 1 lemon, halved * 1 onion, quartered Vegetables * 1½ lbs baby Yukon Gold potatoes * 4–5 carrots, peeled and cut into large pieces * 1 onion, cut into wedges * 2 tbsp olive oil * Salt & pepper * A little extra chopped rosemary and parsley Instructions 1. Preheat oven to 425°F. 2. Make the herb butter: Mix together the softened butter, minced garlic, parsley, rosemary, oregano, salt, pepper, and paprika. 3. Prepare the chicken: Pat the chicken completely dry. Carefully loosen the skin over the breasts and thighs. Spread about ⅔ of the herb butter underneath the skin, getting it directly onto the meat. Rub the remaining butter all over the outside of the chicken. 4. Stuff the cavity with the lemon halves, herbs and quartered onion. 5. Prepare the vegetables: Toss potatoes, carrots, and onion with olive oil, salt, pepper, and a little extra rosemary and parsley. 6. Arrange: Spread the vegetables in a large roasting pan or Dutch oven. Place the chicken directly on top of the vegetables, or use a roasting rack if you have one. 7. Roast at 425°F for 20 minutes. 8. Reduce the oven to 375°F and continue roasting for 60–75 minutes, stirring the vegetables once or twice so they cook evenly in the chicken drippings. 9.
