Let me start by saying BE NICE IN THE COMMENTS!! This is not authentic Caribbean oxtail this is just how I made them. I tried my best to get all the right components in there and I wish the store had scotch bonnet but they did not. I think these came out pretty good. Nice and tender. 🫣 Braised Oxtail Recipe Marinade * 4.5 lbs oxtail * 1 small green bell pepper, chopped * 1 small red bell pepper, chopped * ½ yellow onion, chopped * Handful of fresh thyme * 10 garlic cloves, minced * 3 tbsp green seasoning * 1 tbsp browning * 3 tbsp soy sauce * ½ tbsp onion powder * ½ tbsp garlic powder * ½ tsp MSG * 2 tsp allspice berries * 4 stalks green onion, chopped * 1 packet Maggi All Purpose Seasoning For the Braise * 6 cups water, or enough to cover the oxtail * ¼ cup ketchup * 2 tbsp brown sugar * 1 tsp Better Than Bouillon Beef Base * 1 Scotch bonnet pepper Instructions 1. Thoroughly rinse the oxtail several times until the water runs clear. Then wash with lime and vinegar to help remove any blood and bone grit. Rinse again and pat dry. 2. Add the oxtail to a large bowl with all of the marinade ingredients. Mix thoroughly, making sure every piece is well coated. Cover and marinate overnight, or for at least 3 hours. 3. Heat a large heavy-bottomed pot over medium heat. Add the brown sugar and allow it to slowly melt and caramelize into a deep brown liquid. 4. Add the marinated oxtail to the pot and sear on all sides until nicely browned. Work in batches if needed so you don’t overcrowd the pot. 5. Add the remaining marinade ingredients to the pot and sauté for a few minutes, scraping up the flavorful bits from the bottom. 6. Return the oxtail to the pot and add enough water to completely cover the meat. Add the beef bouillon and Scotch bonnet pepper. 7. Bring everything to a boil, then reduce the heat to low. Cover and simmer for 2–3 hours, or until the oxtail is fork tender and the meat is pulling away from the bone. 8. During the last 45 minutes of cooking, stir in the ketchup. Continue simmering until the gravy reaches your desired consistency. 9. Taste the gravy and adjust the seasoning if needed. #fyp #oxtail #homecook #Recipe #dinner
