✨Soft Homemade Flour Tortillas✨ *Recipe makes 6 medium sized tortillas. Double the recipe for 6 large, burrito sized tortillas* Ingredients * 276 g all-purpose flour (about 2¼ cups) * 1 teaspoon fine salt * 1 teaspoon baking powder * 4 tablespoons (56 g) butter, melted * 150 g warm water (about ⅔ cup) Instructions 1. Make the Dough Add the flour, salt, and baking powder to the bowl of a stand mixer fitted with the dough hook. Mix briefly to evenly distribute the dry ingredients. Pour in the melted butter and mix until the butter is completely incorporated and the flour has a sandy, crumbly consistency. Stop the mixer and scrape down the sides and bottom of the bowl, then mix once more to make sure the butter is evenly distributed. With the mixer running on low, begin adding the warm water a few tablespoons at a time, allowing it to incorporate before adding more. Continue mixing until a smooth, soft dough forms. The finished dough should be soft and smooth but not sticky. It should slide easily off the dough hook and shouldn’t stick to your hands. 2. Portion & Rest For medium-sized tortillas, divide the dough into 75 g portions and roll each portion into a smooth ball. Place the dough balls on a tray, leaving a little space between them. Cover with a damp kitchen towel and allow them to rest for 15 minutes. This rest allows the gluten to relax, which makes the tortillas much easier to roll thin without constantly shrinking back. 3. Roll the Tortillas Working with one dough ball at a time, lightly flour your work surface if necessary. The easiest way to get a round tortilla is to roll back and forth in one direction first, creating a long oval. Rotate the dough 90 degrees, then roll back and forth again. Continue rotating the tortilla 90 degrees and repeating this process until it is evenly rolled out into a thin, round tortilla. Keep the remaining dough balls covered while you work so they don’t dry out. 4. Cook Heat a dry skillet or cast-iron pan over medium-high heat. Let the pan get fully hot before cooking your first tortilla. Place one tortilla into the hot pan. Cook until you begin to see small bubbles forming across the surface. That’s typically your sign that it’s ready to flip. Flip and cook the second side until lightly browned with golden-brown spots. Remove from the pan and repeat with the remaining tortillas, cooking one at a time. 5. Keep Them Soft As the tortillas come off the pan, stack them and immediately cover them with a clean kitchen towel. The trapped steam will keep them warm, soft, and pliable while you finish cooking the rest. Tip: Don’t wait for the entire first side to look browned before flipping.
